Let’s talk about smashing avocado on a piece of toast. Let’s talk avocado toast!
Avocado toast isn’t new. Not today, not two years ago. Dominicans have been smashing fresh avocado onto bread for decades, dating back decades. Crazy, huh? I grew up in the 90’s, eating fresh avocados from our backyard tree. I remember smashing avocado onto a piece of sandwich bread, then drizzling it with olive oil and a splash of white vinegar!
But whether it’s old or new, avocado on bread is probably the best thing in the world. Keeping it simple is great, but today I’ve created four of my favorite ways to eat this delicious item. Try them all and let me know which one is your favorite!

Breakfast Avocado Toast:
Toast a slice of bread and smash half an avocado on top, then season with salt and pepper. Top with cooked bacon, crumbled cheddar cheese, and a fried egg.
New England Avocado Toast:
Toast a slice of bread and smash half an avocado on top, then season with salt and pepper. Make lobster salad by chopping fresh lobster meat and mixing it with chopped celery, lemon zest, and mayonnaise. Top avocado with lobster salad and a fresh sprig of dill.
Smoked Salmon Avocado Toast:
Toast a slice of bread and smash half an avocado on top, then season with salt and pepper. Layer slices of smoked salmon onto it and sprinkle with thinly sliced red onion.
Caprese Avocado Toast:
Toast a slice of bread and smash half an avocado on top, then season with salt and pepper. Chop tomato and sprinkle over avocado. Add some pearled mozzarella cheese and hand torn basil leaves, then drizzle with balsamic glaze.
My ultimate favorite of the four versions is the breakfast avocado toast.
The fried egg with the runny yolk made for a decadent mid-day snack! I suggest making these for your next brunch or breakfast with the family – everyone will love them.
