If you haven’t noticed, one of the biggest trends last year were savory vegetable yogurts. They popped up everywhere around the nation and even top chefs were using the vegetable-driven yogurts in their kitchen. That’s where this idea came from. Because we use yogurt in some many sweet recipes, I got to wondering why not use it as a base for a savory recipe, like these creamy vegetable yogurt dips?
Not only are these vegetable yogurt dips packed with vitamins and minerals from vegetables like carrots, eggplants, and beets, but the vibrant colors of Mother Nature shine through the yogurt and make these the most gorgeous dips your table will have ever seen!
Each of the creamy vegetable yogurt dips are blended with a specific vegetable (or vegetables) to create enticing flavors and textures. Here’s what each one delivers:
- Carrot Yogurt Dip isn’t just carrots, but sweet potatoes come to play as well. Spiced with the Middle Eastern spice blend called tatar, its gorgeous deep orange color lets you know it’s packed with healthy beta carotene.
- Eggplant Yogurt Dip has a deep roasted flavor of eggplant, which is enhanced with a North African spice blend called berbere, a key ingredient in the cuisines of Ethiopia and Eritrea.
- Beet Yogurt Dip is my favorite just purely because of how beautiful it looks. Top it with stark white feta crumbles for an enticing contrast as well as some watercress for crunch and nutrients.
These dips are delicious on their own and served with crunchy vegetables like celery or carrots, as well as chips and pita bread. Try dolloping some on grilled meats and fish, as well as using them as salad dressings (you’ll have to add some water to make them a little runnier). The possibilities are endless! Vegetable Yogurt Dips
Ingredients
For beet dip:
- 1 large beet
- ½ cup Whole Fat Greek Yogurt
- ¼ cup crumbled feta cheese for topping
- salt and pepper to taste
For eggplant dip:
- ½ large eggplant
- ½ cup Whole Fat Greek Yogurt
- 1 teaspoon Berbere Ethiopian spice blend save half for topping
- salt and pepper to taste
For carrot dip:
- 2 medium carrots
- ½ sweet potato
- ½ cup Whole Fat Greek Yogurt
- salt and pepper to taste
- 1 tablespoon za'atar spice for topping
Instructions
- To make each dip, just blend using an immersion or regular blender until smooth. Do not blend the toppings.
- Make sure to taste and season with salt & pepper at the end.
