This BBQ Aioli is made with Sweet Sunshine’s Roasted Shallot & Garlic sauce and turns any simple sandwich or burger into a gourmet item. A couple of weeks back we shared a recipe for Grilled Cauliflower Steaks with Jamaican Jerk Cashew Sauce and it was a total hit – not only did readers love it, but my taste testers enjoyed the heartiness of a meatless dish. Today we’re continuing with the meatless theme with these Vegetarian Summer Sandwiches.

But first, let’s make aioli! What is aioli, you ask? Similar to mayonnaise, it’s an emulsion made from egg yolks and oil, traditionally flavored with garlic. Mayonnaise tends to stay away from the garlic and in this recipe the garlic comes from the sweet, spicy, garlicky Sweet Sunshine sauce we add at the last minute for flavor and color.
With a little arm power, a bowl, and a whisk – you’ve got everything you need to start making aioli. The great thing about this French condiment is that you can easily adapt it to any occasion by flavoring it different. This BBQ aioli works perfectly for summer sandwiches, but add lemon zest for a brunch or a touch of truffle oil for a dinner party. The possibilities are endless! Because this Sweet Sunshine sauce has roasted shallots and garlic, the need for the traditional addition of garlic to aioli is no longer needed.

Ingredients
for the aioli:
- 1 fresh egg yolk
- ¾ cup vegetable oil
- 1 tablespoon Sweet Sunshine sauce
- 1 teaspoon lemon juice
- salt to taste
for the sandwiches:
- 1 eggplant sliced and grilled
- 1 pound fresh mozzarella sliced
- 1 cup fresh basil leaves whole
- 1 baguette sliced and grilled
Instructions
- In a small bowl, whisk the egg for 30 seconds. Slowly add the oil drop by drop until an emulsion forms and then whisk in a slow stream. Use up all the oil and then add Sweet Sunshine sauce. Season with salt and lemon juice to taste.
- To build sandwiches, slather warm grilled bread with aioli. Layer with grilled eggplant slices, mozzarella cheese, and basil leaves. Enjoy while warm!

burger and grilled chicken
I would use them on steak and chicken…Hope you’re having a wonderful July 4th weekend
i would cook my chicken with this sauce
I would use them on meats BUT I would also do alot of experimenting with them as well.
I would use it as a sauce on our meat while grilling and I would try it in salads
I would try one of the sauces for a burger first. I need a new twist that’s yummy.
I love a chicken and bacon sandwich that I think this sauce would really spice up.
making dips
We are big grillers here so I think they would go with baby back ribs, chicken, and assorted veggies.
