In a small bowl, whisk the egg for 30 seconds. Slowly add the oil drop by drop until an emulsion forms and then whisk in a slow stream. Use up all the oil and then add Sweet Sunshine sauce. Season with salt and lemon juice to taste.
To build sandwiches, slather warm grilled bread with aioli. Layer with grilled eggplant slices, mozzarella cheese, and basil leaves. Enjoy while warm!
Notes
If you want to serve the sandwiches hot, throw the sliced grilled eggplant topped with mozzarella in the oven for a few minutes to get hot and bubbly!
