Have you ever had a mint latte? This discovery of mine has led to a near-almost obsession – I drink them hot or iced, with extra fresh mint because it’s overflowing under my deck this summer! Make this Peanut Butter Mint Iced Latte and taste how bright and refreshing it it.
My love for coffee goes far – I grew up in a country that coffee was part of our daily ritual. And between my Bulletproof Coffee, Chocolate Hazelnut Latte, Vietnamese Wild Blueberry Iced Coffee, and Banana Coffee Cashew Smoothie, you can notice a trend. A coffee trend, that is!
Today, I’m partnering up with my ever favorite yogurt, Stonyfield, and a new friend, Justin’s Nut Butters, for a recipe that will make you crave summer all year long. You might be wondering why I’d ever blend yogurt in a coffee, but let me tell you it’s the best idea ever – it makes the ice coffee creamy, with a hint of tartness that balances out the sweet honey peanut butter. And we all have fresh mint overflowing in our gardens, so this is the best way to harvest your bounty.
Peanut Butter Mint Iced Latte

Ingredients
- 2 cups coffee chilled
- 1 cup milk of your preference
- 1 tablespoon honey
- 2 tablespoons Honey Peanut Butter
- ¼ cup Stonyfield Greek Yogurt
- ¼ cup fresh mint leaves
- ice to fill two glasses
- whipped cream to top
Instructions
- Place everything but the ice and whipped cream in a blender and blend until smooth.
- Pour over two, ice filled glasses and top with whipped cream.
