The first thing I do every morning is open my eyes and make my way to the kitchen, where I brew a cup or a pot of coffee. The amount I make depends on how much energy I need that day. When I do need extra caffeine, and brew a pot full of coffee, I never drink it all. And I won’t anger the coffee gods by pouring the leftover coffee down the drain! I pour the coffee into a mason jar and tuck it in the fridge for later consumption.
One morning, I thought to add cold coffee to my breakfast smoothie. That’s how this Banana Cashew Coffee Smoothie came to fruition. I used leftover coffee, frozen bananas, my favorite nut butter (cashew!), and protein-packed Greek yogurt.

- 1 large banana, frozen in chunks
- 1 cup coffee, cooled
- ½ cup Stonyfield Vanilla Greek yogurt
- 2 tablespoons cashew butter
- ½ cup ice
- Blend everything until smooth and drink immediately!
