Friends, I have a confession to make. I am addicted to sweet potatoes, and there’s no way I will stop eating them! But then again, why would I ever want to? They are one of the healthiest tubers around, packed with vitamins and minerals, and great taste!

My love for sweet potatoes became an obsession during the hunt for fingerling sweet potatoes. I’ve tasted them at events before, but never saw them in the local markets. So I took to Twitter to see if anyone had any leads or clues that would help me find the tiny, precious potatoes.

After a couple of tweets, Frieda’s Inc. tweeted back to say that they have fingerling sweet potatoes, so I was overjoyed!

Having found a source for bite sized sweet potatoes, I began to develop the recipe for these Loaded Sweet Potato Skins!

Potato skins may just be the best party appetizer, especially for fun, casual parties. Plus, they pair well good cheddar cheese, a sprinkling of fresh herbs like cilantro, and of course, bacon.

As previously mentioned, my word for 2016 is “balance”, and this recipe is all about that. Finding a balance in the things I love (potato skins), and making them a little healthier using sweet potatoes.

Health Benefits of Sweet Potatoes:

Sweet potatoes are packed with antioxidants and vitamin A, and are also known for their anti-inflammatory health benefits. Classic russet potatoes are almost the same calorie-wise, but nutrient dense sweet potatoes are far healthier for you! That being said, there’s a time and place for every potato!

Did you notice the gorgeous palm leaf plates I served these Loaded Sweet Potato Skins on?

You can see and order them online on Restaurantware.com. They’ve supplied the restaurant for a couple of years now, but they are also a great resource of supplies for hosting parties at home!

I’d love to share some information about this specific palm leaf tableware: Typically, party tableware is one of the biggest wastes of a party, and I love how eco-friendly these plates are!

Produced without killing trees: Our palm leaf plates and bowls are made from fallen palm leaves after they are collected from the ground. Thus, unlike other wood tableware, no trees are harmed in the process of making our palm leaf collection. Since leaves fall all the time, our palm leaf plates and bowls are made from a reliable and sustainable resource. This reduces our impact on the environment, because our palm leaf plates take the place of tableware made from live trees or non-renewable resources. We save trees, and our planet, all while using stylish tableware.

Biodegradable and compostable: Our palm leaf plates and bowls are 100% organic and made out of all-natural palm leaves. This tableware is biodegradable and compostable, so you reduce your waste by disposing our palm leaf tableware correctly. Over time, our palm leaf plates will decompose on their own, unlike many plastics or other materials. This reduces our piled-up waste in landfills, which also decreases the pollutants we release into their air. – Restaurantware.com

  1. I have to agree – sweet potatoes are where it’s at! I LOVE these little fingerling ones!

  2. Love Frieda’s veggies!! I’ll have to keep my eye out for some fingerling sweet potatoes! I’ve not seen them – but now I’m on the hunt!!

  3. These look amazing! I’ll have to keep my eye out for fingerling sweet potatoes… they sound like they’d be the perfect size for a dish like this. Usually, the only sweet potatoes I can find are huuuuuuge. It’s fine when I’m chopping them up for roasting or stews, but you could feed four people if you tried making potato skins out of them!

  4. These potato skins look awesome! I think I like the idea of using sweet potatoes even better than white potatoes. I wish I had a few to eat for breakfast…is that weird? 🙂

  5. I was just telling my daughter that I wanted to make potato skins. Maybe I’ll give these a try for a nice change.

  6. 5 stars
I have been waiting for these!! <3 Call me crazy, but I did not take to sweet potatoes until I was well into adulthood! (But the only exposure I had before that was that sickeningly sweet sweet potato casserole with marshmallows on it that's served at Thanksgiving!)

I am putting these to the top of my must-make party foods list! Love them!
