These Loaded Sweet Potato Skins are made with fingerling sweet potatoes, which make the perfect small appetizer for game night!

Ingredients

fingerling sweet potatoes

greek yogurt
¼
cup
chopped fresh cilantro
½
cup
shredded cheddar cheese
4
strips bacon
cooked

tablespoon
chipotle puree
salt and pepper
to taste
to serve
greek yogurt and fresh scallions
Instructions
Preheat the oven to 400F and place whole fingerling potatoes on baking tray. Cook for 20 minutes, until tender.
Once potatoes are cooked, cool for ten minutes and cut lengthwise. Using a spoon, scoop the insides into a bowl.
Stir in yogurt, cilantro, cheese, half the bacon, chipotle puree, and season with salt and pepper.
Pipe filling back into potatoes and sprinkle bacon on top.
Bake for 20 minutes, until golden brown. Serve with more greek yogurt and fresh scallions.
