GREEN GODDESS DRESSING

This problem with making a recipe I fall in love with, is that I then spend a week consuming it during every meal. Three times a day, every day for the past week, I’ve consumed this Green Goddess Dressing recipe. In all shapes and forms. On everything from fried eggs to sandwiches, and salads of course. I’ve dipped, slathered, dolloped, dunked with this dressing. Breakfast, lunch, and dinner – they’ve all been graced with the flavors of Green Goddess

What make this recipe so special? Well, it starts with the new Organic Whole Milk Greek Yogurt by Stonyfield, which makes it so creamy and decadent, without all the regular calories in dressing! Next up is the combination of fresh herbs: basil and mint add a pop of bright freshness that you’ll love. The savoriness of raw garlic not only adds flavor, but the health benefits from garlic are too many to even list! Same thing with watercress. Did you know watercress is the new kale? It’s PACKED with Vitamin K, as well as calcium, magnesium, and potassium – more than any other greens actually. It’s a powerhouse green that I’ve use in this recipe to add flavor and nutrition.

And what’s allowed me to keep consuming this dressing is that I stored it in a Ball Canning Jar, specifically a Pint (16-oz.) size Wide Mouth Jar. I love the wide mouth jars because it’s easy to just dunk a spoon in there to drizzle my dressing with!

This fresh and bright salad dressing is one of my favorites over salad greens as well as a slathering spread on a sandwich!

Ingredients

  • 1 cup Whole Fat Greek Yogurt
  • ½ cup fresh watercress
  • 2 tablespoons fresh basil
  • 1 tablespoon fresh mint
  • 2 tablespoons lemon juice
  • 1 small clove garlic
  • ½ teaspoon kosher salt
  • freshly cracked pepper

Instructions

  • Place all the ingredients in a blender until smooth.
  • Store in a glass jar with a tight lid and keep refrigerated.
