I know I’m crazy sharing with you a brownie recipe two days before Christmas, but I promise you, make these today and save them to have them for Christmas breakfast. Because everyone has brownies for breakfast, right? … RIGHT?! 

One thing I can bake with my eyes closed are brownies. Not only can I bake them with my eyes closed, but I can eat them just as well. Brownies have that special characteristic that will satisfy that “cake craving” (cause you know we all have cake cravings!), but can be treated as an on-the-go snack without having to go through the whole formality of cake (you know, plate and fork.)

They can also be adapted to your liking, creating “healthy” brownies with whole wheat flours or making Christmas brownies by adding crushed candy canes. Today, we’ll be making some Holiday Spice Brownies, with spices from one of the most complete online spice sites in the world, My Spice Sage!

Holiday Spiced Brownies
Adapted from “Mother’s Best” by Lisa Schroeder
1 stick unsalted butter
2 ounces 70-85% dark chocolate (I used a mix of Trader Joe’s and Green & Black’s)
3/4 cup granulated sugar
1/4 teaspoon salt
1 teaspoon total of allspice, cloves and nutmeg
1/4 teaspoon cinnamon
1 teaspoon vanilla extract
2 teaspoons liquid coffee concentrate (or 1 tsp instant coffee)
2 large eggs
1/2 cup all-purpose flour
2 tablespoons powdered sugar
1/4 teaspoon cinnamon

  1. Preheat oven to 350F. 
  2. Melt chopped chocolate and butter over a double boiler, careful not to burn the sides. 
  3. In a separate bowl, whisk together sugar, salt, spices, vanilla, coffee and eggs. Whisk until smooth and creamy. 
  4. Add flour and stir until incorporated. Spread in an 8×8 inch pan that has been previously greased and bake for 20-30 minutes.
  5. Cool and dust with spiced powdered sugar. Cut into squares and enjoy!
