For my first article on Honest Cooking, I contributed a product review of Teamotions, “teas for well-being”. Samples of Teamotions were sent and I was in love with them: the packaging, the smell, the whole flowers and petals in the tea! Wanting to try out a simple recipe that showcased the flavors of the tea, I decided on keeping with the “Beat the Heat Series” and this is my second installment: Passionfruit Jasmine Green Tea Granita. You can read the first of the “Beat the Heat Series” on a delicious sangria recipe by John Clift, Wine Director of Atria Restaurant on Martha’s Vineyard here.
Passionfruit Jasmine Green Tea Granita
Ingredients
1 tablespoon of loose tea
1 pint of water (16 ounces)
1/4 cup tea simple syrup (explained in method underneath)
Method
- Pour cool water over tea leaves and steep overnight in fridge.
- Next morning, strain tea and reserve 1/4 cup in a small saucepan. Add 1 tablespoon of brown sugar and dissolve over high heat. Simmer until all sugar is dissolved.
- Add the simple syrup to the strained tea and place in shallow dish. Place dish in freezer and scrape ice crystals every 30-45 minutes, depending on your freezer.
- Serve along side a cookie or sprinkle some edible petals over it.
- Enjoy!

I love tea more than coffee. I love all the flavors and the colors just cheer me up. I don’t know if I had granita before… but Im pretty sure I would love it as much as I love green or white tea.
