Piña Colada Ice Pops

To those that say summer is almost over – STOP IT! Make these Piña Colada Ice Pops and enjoy September, because summer doesn’t end for another entire whole month!

“End of summer”…”Back to school”…these are the phrases I’ve been hearing lately and I’m trying to just say STOP! Stop the madness and enjoy what’s left of summer – an entire month! The first day of Fall is REALLY far away (September 23rd to be exact), so soak up the sun and enjoy the present.

To help you enjoy the present, I’ve made these Piña Colada Ice Pops – seriously a taste of the tropics, right here in New England. Tart pineapple blended with luscious coconut milk, a splash of rum, vanilla, and a hint of sugar. Also note that I added some mint tea. During the summer months, I steep fresh mint leaves in water overnight and sip on it all day. The health benefits are awesome, plus I love keeping hydrated and just water can get really boring. You can also just use mint tea bags in this recipe – I think it adds a great herbaceous flavor to the pops!

Quick tip: when wanting to sweeten an ice pop, use powdered sugar that dissolves instantly in any liquid. You don’t want any crunch from sugar in your pops and that’s the way to avoid it!

Piña Colada Ice Pops

Serves: 10 ice pops
 
Ingredients
  • 1 cup chopped pineapple
  • 1 cup coconut milk
  • ½ cup cool mint tea
  • 2 tablespoons powdered sugar
  • ½ tablespoon rum
  • 1 tablespoon vanilla extract
Instructions
  1. Blend all the ingredients together until the pineapple breaks up.
  2. Pour into ice pop molds and freeze overnight.
  3. Enjoy on a hot summer day!
