I know, I know. Summer is supposed to be about fresh salads, ice creams, cocktails on the deck, and leisurely weekend brunch. But for those of us on Martha’s Vineyard and any other seasonal world, the summer turns into 16-hour days, when your only day off you have to spend it doing laundry and catching up on emails. Summer days are long, yes – but jam packed for us. M and I work endless hours at the restaurant, to come home at times starving. He grabs a frozen pizza (what chefs eat after work!) but I need something a little heartier and a little less fattening. That’s where soups like this Lentil Thyme Soup come in – they are healthy, hearty, and extremely flavorful, without a lot of effort. (But I do promise some upcoming recipes for all those summer foods you love so much!)
With our busy schedules, that one day off a week I spend it catching up on laundry and making one or two different kinds of soups for the week. Whether we eat it for lunch on a quick break or sip on it after a long day with a cold beer, it feels good know that it’s there for us. Even better, you can freeze it in individual containers and just heat it up as you need it.
For this soup, my liquid was Pacific Foods’ Organic 7-Grain Non-Dairy Beverage. It’s packed with oats, brown rice, wheat, barley, triticale, spelt, and millet, that when all of them come together, come together to form a rich, creamy liquid that’s perfect to simmer soup with. The whole grains aren’t overwhelming, adding a subtle nutty flavor to the soup, giving it a great balance. Lentil Thyme Soup

Ingredients
- 2 tablespoons olive oil
- 2 garlic gloves minced
- 2 cups lentils pre-cooked
- 2 cups 7-grain non-dairy beverage
- 2 sprigs fresh thyme
Instructions
- Preheat oil and sauté the garlic in it until aromatic. Add the lentils and cook for 3 minutes.
- Pour in the non-dairy beverage and thyme springs. Simmer for 10 minutes.
- Serve hot with fresh thyme leaves.
