It’s that time of year, when slowly but surely, the end of summer approaches. The summer nights get shorter and the temperature seems to be slightly chiller at night. Those are the nights when this Homemade Mac & Cheese from Annie Mahle’s new book “Sugar & Salt” comes into play.

Annie is the chef at the two-masted restaurant and sailing schooner J. & E. Riggin, based out of Rockland, Maine. She cooks on a boat during the season and recipes like this pop up depending on the weather and the season. I say the weather, because mac & cheese is such a comforting, cool night kind of dish and this one is no different.

  1. I just make it with cheddar and mozzarella cheese. Also, breadcrumbs on the top.

  2. I love a spicy mac and cheese! Although my favorite mac and cheese has to be one that has some tomatoes and green onions in it…it just gives it a little bit extra. Mmmmmm!

  3. I grew up in an Italian household and we never once had mac & cheese. Honestly the first time I had it was at 14, babysitting for the neighbors…they left out a box of Kraft M&C to make for their kids’ dinner. The orange sauce-covered macaroni was distinctly unappealing, so I never developed an interest in it. When I think mac & cheese, the closest I’ve had is my Mom’s penne with butter and lots of parmesan cheese. Now that is heavenly!

  4. I would love a good Mac-n- cheese recipe! My family loves the kind in the “blue box” and not the real stuff. 🙁

  5. I’ve always followed the Betty Crocker recipe (in the big red book) although I’ve made it enough that I no longer need the recipe. I usually don’t bake it either – saves 20+ minutes at dinner time 🙂 and tastes just as yummy. We like to mix it up a bit and try different seasonings, and lately I’ve been making it gluten-free by using brown rice flour for making the roux (and also serving it over rice or quinoa). Think I’ll be trying some new mac-n-cheese recipes this fall-thanks for sharing!

  6. When I moved to NY — my husband’s family (then boyfriend) never had homemade macaroni and cheese – I made it for them – and they were gobsmacked. Now I have other members of the family making it – and I have found a new recipe that I love better than all the rest – it’s sweet corn macaroni and cheese and it is fantastic!
