It’s that time of year, when slowly but surely, the end of summer approaches. The summer nights get shorter and the temperature seems to be slightly chiller at night. Those are the nights when this Homemade Mac & Cheese from Annie Mahle’s new book “Sugar & Salt” comes into play.
Over at Virtual Potluck we’ve teamed up and cooked from this gorgeous little book and you can check out a round-up of recipes, as well as an interview with the author, of at Diabetic Foodie’s blog!
Annie is the chef at the two-masted restaurant and sailing schooner J. & E. Riggin, based out of Rockland, Maine. She cooks on a boat during the season and recipes like this pop up depending on the weather and the season. I say the weather, because mac & cheese is such a comforting, cool night kind of dish and this one is no different.
Come experience a Maine sailing vacation along the rocky coast on the historic Maine Windjammer, Schooner J.& E. Riggin. Enjoy 3, 4, or 6-day eco-friendly sailing vacations as your windjammer cruise, departing from Rockland Maine, takes you past the spruce clad islands, unequaled rocky coastline and legendary lighthouse dotted bays of Penobscot Bay. – Maine Windjammer site

I looooove Macaroni & Cheese and will seriously eat it any way I can get it…even from a blue box! My favorite way, though, is with a thick cheesy cream sauce, cavatappi noodles, and a crunchy panko topping. Yummmmmmmmmmmmmmmmmmmmmmmmmmmm!!

I love making stove top mac and cheese…far creamier than baked!
So bummed I missed the giveaway-sounds like a womderul book! I have lots of great food memories in Maine. I’ve driven through Rockland on several occasions when travelling from Boston to visit my aunt and uncle who live in Union (near Camden). My aunt is an amazing cook, and also has a large garden, so there are lots of blueberries, fresh peas, lobster of course, and fried clams. Never Mac and cheese though…Hmm…my favorite recipe is the one from Gluten Free Girl and the Chef-the key being a blend of different cheeses which I change every time I make it.
My favorite way to make mac and cheese is to start it on the stove top, layer it with veggies, and then finish it in the oven, topped with a healthy broccoli crumb.
A gruyere cheese sauce on the stovetop, then take it to the oven with a bread crumb topping.
I get some locally made pasta, grate several cheeses, garnish with panko breadcrumbs in a bit of butter and bake to perfection!
