Bananas again. I know, there’s an entire world of fresh fruits and vegetables out there to be exploring! All the Caribbean has to offer: mangoes, avocados, pineapples, passion fruit! Worry not, I will get to them if I haven’t. But today I wanted to share with you my experience with making the one-ingredient ice cream that was all the rage the past few weeks. The Kitchn ran an article first teasing us about this great idea and then came through with the step-by-step method. As soon as I saw it, it was bookmarked and written down on my list of foods I needed to make this summer (yes, I have a 19 item list of foods/trends I will be making this summer). This was one of the last things on my list, but probably one of the first I made.
This is the perfect third addition to our “Beat the Heat” series because it’s refreshing, fast and simple. Nothing more than frozen bananas and any add-ins you’d love! Naturally gluten free, lactose free, sugar free, but FULL of happiness!
The method is quite simple and the first thing you do is peel bananas. I did 3 large bananas as you can see and it came out to be about 1/2 quart of ice cream.
Slice the bananas and layer them on a sheet tray. Place in freezer for 1-2 hours (make sure they aren’t rock solid). Throw in food processor and let the magic happen!
At first, you’ll be doubtful. I was. The bananas chunk up, turn into this funky texture and then right before your eyes, turn into a gorgeous ice cream. I couldn’t open my processor fast enough and dipped a spoon in it: creamy, unctuous goodness that is good for you! I couldn’t believe my eyes: ice cream made from my favorite fruit, no sugars added, not a drop of dairy in it. Amazing!
If you do one thing this summer, make this. You won’t regret it! You can add a swirl of caramel or Nutella; you can mix in and pulse into the mix a spoonful of raw almond butter; add-ins such as coconut flakes, dried fruit, chocolate chips, or anything you’d like would add a lovely texture!
Healthier than eating full-fat ice cream (although I love that as well!), here are some awesome banana attributes: very low in saturated fat, no cholesterol, high in dietary fiber, high in potassium, high in vitamin B6, and high in vitamin C.

I recently made this too! I had to use a blender because I don’t have a food processor. But I like the look of the consistency of the food processor ice cream. Yum.
