Another week, another Monday. Even though I freelance from home, the week goes by as it does for everyone else and Monday definitely feel different. I for one, love Mondays: fresh, clean and you have a new to-do list to tackle. If Mondays aren’t as great for you, come on over, have a muffin and live Mondays like they were Friday! 

I don’t have to tell you I love Bacon. You know this. I’d give up Nutella for Bacon (wow, did I just type that?!) but Bacon deserves it. It’s crisp, it’s porky, it’s fatty. Bacon with Eggs, Bacon Chocolate, Bacon Ice Cream, Bacon Sandwiches, Bacon Dressing (makes salads bearable, specially if over the dressing sits a poached egg); and now Bacon Cheddar Muffins! Baker Street sent us the main recipe and my modifications are noted next to it. Warning: Don’t use as much cheese or bacon as I did. They won’t rise as much. But they were oh-so-good. You do what you want. These were made over at Francys’ (La Cocina Kitchen) house, but you’ll see some differences!

Bacon Cheddar Muffins
Great for breakfast, as a side to fried eggs! 

Ingredients
6 strips bacon cooked and chopped (10 strips of bacon)
(2 cloves of garlic, chopped)
(1/2 small onion, chopped)
1 cup shredded and aged cheddar (2 cups of cheese)

3 cups all-purpose flour
2 tbsp granulated sugar
1 1/4 tbsp baking powder (1 1/2 tbsp baking powder)
2 tsp pepper
1 tsp salt (1 tablespoon salt)
1 cup milk (1 cup water)
1/2 cup vegetable oil
1/2 cup  sour cream (1/2 cup plain yogurt)
2 eggs

Method

  1. Preheat the oven to 375°F (190°C) and grease or paper line a 12 hole muffin pan
  2. In small bowl, combine 1 tbsp of the chopped bacon and 2 tbsp of the Cheddar; set aside.
  3. In large bowl, whisk together flour, sugar, baking powder, pepper and salt ; stir in remaining bacon and Cheddar.
  4. Whisk together milk, oil, sour cream and eggs; pour over dry ingredients. Stir together just until moistened. Do not over mix.
  5. Spoon into greased or paper-lined muffin cups; sprinkle reserved bacon and Cheddar mixture on top.
  6. Bake for 20 to 25 minutes or until tops are firm to the touch and muffins are golden.

  1. Now you’re taliking my kind of food…lol. Bacon AND Cheddar..I could the whole dozen for breakfast! 🙂 Um…that egg looks a little to ‘clean’ to have been fried in bacon grease (the only acceptable method)!! Double Yum.
