Friends, I have a confession to make. I am addicted to sweet potatoes, and there’s no way I will stop eating them! But then again, why would I ever want to? They are one of the healthiest tubers around, packed with vitamins and minerals, and great taste!

My love for sweet potatoes became an obsession during the hunt for fingerling sweet potatoes. I’ve tasted them at events before, but never saw them in the local markets. So I took to Twitter to see if anyone had any leads or clues that would help me find the tiny, precious potatoes.

After a couple of tweets, Frieda’s Inc. tweeted back to say that they have fingerling sweet potatoes, so I was overjoyed!

Having found a source for bite sized sweet potatoes, I began to develop the recipe for these Loaded Sweet Potato Skins!

Potato skins may just be the best party appetizer, especially for fun, casual parties. Plus, they pair well good cheddar cheese, a sprinkling of fresh herbs like cilantro, and of course, bacon.

As previously mentioned, my word for 2016 is “balance”, and this recipe is all about that. Finding a balance in the things I love (potato skins), and making them a little healthier using sweet potatoes.

Loaded Sweet Potato Skins

These Loaded Sweet Potato Skins are made with fingerling sweet potatoes, which make the perfect small appetizer for game night!

Loaded Sweet Potato Skins
Prep Time:15 minutes
Cook Time:20 minutes
Total Time:35 minutes

Ingredients

  • 1 pound fingerling sweet potatoes
  • 2 tablespoons greek yogurt
  • ¼ cup chopped fresh cilantro
  • ½ cup shredded cheddar cheese
  • 4 strips bacon cooked
  • 1 tablespoon chipotle puree
  • salt and pepper to taste
  • to serve greek yogurt and fresh scallions

Instructions

  • Preheat the oven to 400F and place whole fingerling potatoes on baking tray. Cook for 20 minutes, until tender.
  • Once potatoes are cooked, cool for ten minutes and cut lengthwise. Using a spoon, scoop the insides into a bowl.
  • Stir in yogurt, cilantro, cheese, half the bacon, chipotle puree, and season with salt and pepper.
  • Pipe filling back into potatoes and sprinkle bacon on top.
  • Bake for 20 minutes, until golden brown. Serve with more greek yogurt and fresh scallions.
Servings: 15 -20
