Ingredients

self-rising flour
or regular all purpose flour plus 2 teaspoons baking powder

teaspoon
kosher salt
¾
cup
granulated sugar
1 ½
lemons
zested and juiced
2
teaspoons
vanilla extract
½
cup
Stonyfield Greek Vanilla Bean yogurt
2
large eggs

tablespoons
coconut oil
melted
Instructions
Preheat the oven to 350F and grease a loaf pan.
Whisk together the flour and salt.
In a large bowl mix the sugar, lemon juice and zest, vanilla, yogurt, and eggs.
Add the wet ingredients to the dry ingredients and mix until incorporated.
Fold in the melted coconut oil and then pour into loaf pan.
Bake for 35-45 minutes, until golden brown.
