For the pancakes, whisk together all the dry ingredients and set aside. In a separate bowl, whisk together the wet ingredients. Dump the wet into the dry and stir just until combined, no more.
Cook as you would pancakes, dropping a little batter at a time onto a medium hot, buttered griddle or pan and flip once first side is browned.
For compote, simmer all the ingredients over medium heat while you make the pancakes, or about 8 minutes. Serve warm over pancakes.
