Coffee Yogurt Pancakes with Strawberry Compote

These pancakes are a show-stopper! Seriously, the delicate coffee flavor imparted by the yogurt and the burst of sweet, tart strawberry compote is all you and your family are gonna need to get the day start! Even better, these are perfect for a leisurely Sunday morning.

If you know me, you know how obsessed with coffee I am. It’s the one thing that can’t miss from my day and if I don’t have it, I’m all sorts of cranky. I know, such a bad habit, but it could be worse! So of course, I want to also put coffee in everything other than just my mug, and that’s where these gorgeously fluffy coffee pancakes come into play.

Using the Cafe Latte Greek Yogurt by my favorite folks over at Stonyfield, I’ve created a pancake recipe that also adds a pep to your step. The coffee flavor isn’t incredibly strong, for those of you not as big coffee fans as me, but it’s definitely there! It’s in homage to February a.k.a. National Pancake Month, so everyone over at the Clean Plate Club is involved in creating some amazing pancake recipes for you using our favorite yogurt, Stonyfield.

On a side note, let me tell you more about their new flavor, Cafe Latte. It’s seriously good. Like, way better than I ever thought a coffee yogurt could be! It’s also the first coffee-flavored yogurt I’ve ever had and it’s set the bar pretty high for whatever comes next. It’s soooo rich and luscious, with the perfect flavor of what a latte would taste like. It’s just sweet enough to balance out the usual bitterness of coffee, which makes me circle back to the love I have for coffee. But enough about me…

Oh and that gorgeous, bright red strawberry compote? Well, I called it a compote for lack of a better word but it’s basically fresh berries (you can use whatever you have available!) simmered with syrup (either maple or agave), and some vanilla extract. It’s so good you’ll want to eat it by itself!

As for Stonyfield, I love everything they stand for, specially their latest project on growing the organic dairy farming system in the Northeast. They’re striving to get more and more aspiring farmers to take the organic course and not only that, but they are helping conventional farmers transition to organic!

Coffee Yogurt Pancakes with Strawberry Compote

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Yield: 6 medium pancakes

Quick and easy pancake recipe packed with protein and tons of flavor!

Ingredients

    For the pancakes
  • 1 cup all-purpose, unbleached flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 3 tablespoons granulated sugar
  • 2 large eggs
  • 1/4 cup whole milk
  • 1/3 cup Stonyfield's Cafe Latte Greek Yogurt
  • 2 tablespoons coconut oil, melted
  • For the strawberry compote
  • 1 cup chopped strawberries
  • 1/2 cup maple or agave syrup
  • 1 tablespoon vanilla extract
  • pinch of salt

Instructions

  1. For the pancakes, whisk together all the dry ingredients and set aside. In a separate bowl, whisk together the wet ingredients. Dump the wet into the dry and stir just until combined, no more.
  2. Cook as you would pancakes, dropping a little batter at a time onto a medium hot, buttered griddle or pan and flip once first side is browned.
  3. For compote, simmer all the ingredients over medium heat while you make the pancakes, or about 8 minutes. Serve warm over pancakes.
