Apricot Studded Sherry Meatballs
These apricot studded sherry meatballs are little treats for your mouth!

dried apricots
chopped

cup
Holland House Sherry Wine
⅔
cup
panko breadcrumbs
⅓
cup
whole milk
½
tablespoon
lemon pepper seasoning

teaspoon
kosher salt

large egg
whisked

pound
ground beef
Instructions
Soak the chopped apricots in the sherry for an hour before starting to make the meatballs.
Preheat the oven to 350F.
In a large bowl, mix the breadcrumbs, milk, seasonings, and egg. Add the ground beef and the soaked apricots (not the liquid).
Form small meatballs and sear in a medium saucepan over medium high heat.
Sear on both sides and the finish cooking in the oven for about 20 minutes, until cooked throughly.
