It’s finally here – you can feel it in the air, you can taste it in your recipes! Spring is finally here and even though it’s a tad chilly in New England, we can see the daffodils sprouting and the air getting clearer. Today I’m bringing you a recipe to make for all your spring get togethers – super easy to make and delicious apricot studded sherry meatballs!
Once again, I’m diving deep into the world of Holland House products and exploring their offerings. Lately, we’ve been cooking with their sherry wine – the perfect addition to your pantry staples, I assure you.
Holland House – Sherry Wine is light golden color, with a mild dry sherry flavor. A bit nutty, but more caramel-like. Deliciously rich tasting and in this particular recipe, when you soak the apricots in the sherry, the flavor really pairs well with the beef meatballs, creating a sweet/savory balance. Oh and wondering what the white specks on my meatballs are? I love finishing everything with kosher salt, of course!
These meatballs freeze exceptionally well either raw or fully cooked – if you are freezing them, make sure to lay them in one layer to freeze, so they freeze individually and are easier to separate. Give these meatballs a try – as well as grab a bottle of sherry cooking wine, and you’ll be surprised at the exceptional flavor boost!
Apricot Studded Sherry Meatballs
Ingredients
- 15 dried apricots chopped
- ½ cup Holland House Sherry Wine
- ⅔ cup panko breadcrumbs
- ⅓ cup whole milk
- ½ tablespoon lemon pepper seasoning
- 1 teaspoon kosher salt
- 1 large egg whisked
- 1 pound ground beef
Instructions
- Soak the chopped apricots in the sherry for an hour before starting to make the meatballs.
- Preheat the oven to 350F.
- In a large bowl, mix the breadcrumbs, milk, seasonings, and egg. Add the ground beef and the soaked apricots (not the liquid).
- Form small meatballs and sear in a medium saucepan over medium high heat.
- Sear on both sides and the finish cooking in the oven for about 20 minutes, until cooked throughly.
