Ingredients

package of four artisan Kayem sausages
chopped
2
large carrots
chopped
4
stalks celery
chopped

large onions
chopped

crushed tomatoes

can black beans

chicken stock

tablespoon
smoked paprika

tablespoon
salt
or more to taste

cooked quinoa
Instructions
In a large stock pot, saute the chopped sausage for 5 minutes.
Add the carrots, celery, and onions and cook until vegetables have soften.
Add tomatoes, beans, chicken stock, and spices.
Let simmer for 30 minutes and then add quinoa, stirring to combine.
Serve immediately or freeze in portions for future meals.
