Roasted Fig & Yogurt Sauce
When figs are in season, roast them to make this sauce topping for fish!

Ingredients
3-4
large figs
quartered into eights
2
tablespoons
dark brown sugar
3
tablespoons
olive oil
1
tablespoon
vinegar
¾
cup
Greek yogurt
salt
Instructions
Heat oven to 400 degrees. Toss figs with brown sugar and roast until tender.
Whisk together the olive oil, vinegar, and yogurt. Season with salt to taste. Fold in the roasted figs.
Serve with fish, grilled chicken, or as an appetizer on crackers.
