Thinly slice the garlic using a knife or mandolin.
Saute the garlic in the hot oil until browned - they'll become super crispy. Watch this, it only takes 2 minutes!
Remove garlic chips and add kale to the pan, along with 1/4 cup water. Cook until water is evaporated over high heat. To serve, sprinkle with garlic chips and season with salt and pepper.
