Deep-Fried Avocado

Ingredients

California avocado
sliced into 1 inch pieces
½
cup
flour
2
eggs
whisked
½
cup
panko or bread crumbs
vegetable oil
enough to deep fry (3-4 inches)
Instructions
Season avocado with salt and pepper and dip into flour.
Shake off excess flour and dip into whisked egg.
Then, dip in panko and coat all sides. Reserve refrigerated until you are ready to fry.
Heat vegetable oil to 350F, and slowly drop the coated avocado slices. Fry until golden brown on all sides.
Serve with a small salad, in a sandwich or as an appetizer with a
dipping sauce
