Cumin Sweet Potato Fries and Cilantro Mayonnaise
Since these fries are baked, you can eat as many as you want!

Ingredients

large sweet potato
peeled

cumin

black pepper

cayenne pepper

teaspoon
kosher salt

tablespoons
olive oil

cup
mayonnaise
fresh cilantro
to taste
fresh lemon juice
to taste
Instructions
Preheat the oven to 400F.
Cut the sweet potato into thick matchsticks and toss in small bowl.
Sprinkle spices, salt, and olive oil over the sweet potatoes. Toss.
Place on sheet pan and bake 30-40 minutes until tender and crispy.
To make mayo: whisk together mayonnaise, chopped cilantro, and lemon juice.
Serve fries with cilantro mayonnaise.
