Add lukewarm water and oil, stir. Cover with towel and refrigerate overnight.
When ready to bake, remove from fridge and let stand at room temperature for 20 minutes.
Oil a small baking sheet and with your fingers, spread dough. If it resists, let rest for a few minutes and try again. Spread to 1/2 inch thick. Sprinkle with coarse sea salt.
Bake at 400F for 20-30 minutes, until golden brown.

For the Lemon Spread
Mix all ingredients together and spread on bread. Sprinkle with lemon zest and serve as appetizer or passed canape.
