Limoncello Pound Cake

  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • ½ teaspoon kosher salt
  • 1 cup whole milk
  • 1 lemon, juiced and zested
  • ½ cup limoncello
  • 1 cup granulated sugar
  • 2 large eggs
  • ¼ cup vegetable oil
for the glaze:
  • ¼ cup powdered sugar
  • 1-2 tablespoons limoncello
  1. Preheat oven to 350F and grease a loaf pan.
  2. Whisk together in a bowl all the dry ingredients (flour, baking soda, baking powder, and salt).
  3. In a separate bowl, whisk the milk, lemon juice and zest, limoncello, sugar, eggs, and oil.
  4. Pour wet ingredients into dry and fold until incorporated. Pour into greased loaf pan and bake 35-50 minutes until done.
  5. To make glaze: mix the powdered sugar and limoncello until smooth. Drizzle over warm cake and serve warm or room temperature.
