This quick avocado bread is a delicious treat anytime of day - moist, flavorful, and delicious!
  • 2 cups all purpose flour
  • 1 cup whole wheat flour
  • ½ teaspoon kosher salt
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • ½ cup oil (vegetable, coconut, olive)
  • 1½ small-sized avocados
  • 2 cups granulated sugar
  • 3 large eggs, room temperature
  • ¾ cup milk (dairy or non-dairy)
  • ¼ cup yogurt
  • 1 lime, juiced
  1. Preheat oven to 350F and grease a loaf pan, set aside.
  2. In a large bowl, whisk together the flours, salt, baking powder, and baking soda.
  3. In your blender, pour avocados, sugar, eggs, milk, yogurt, and lime juice. Blend until mixture is smooth. Pour into dry ingredients and whisk until incorporated.
  4. Pour into greased loaf pan and bake for 1 hour and 15 minutes, turning the pan halfway through baking. Let cool for 15 minutes before slicing.
