Black Bean Fudge Brownies

Serves: 8-12 brownies
These are gluten free and chocolate-filled brownies, packed with extra protein from the black beans!
  • 1, 15.5-ounce can black beans, drained and rinsed
  • 2 large eggs
  • ⅔ cup brown sugar
  • ⅓ cup unsweetened cocoa powder
  • 3 tablespoons vegetable oil
  • 2 teaspoons baking powder
  • 1 tablespoon pure vanilla extract
  • 1 tablespoon espresso powder in 1 tablespoon water
  • 1 cup chocolate chips or chopped chocolate
  1. Preheat the oven to 350F and grease a square 8 by 8 baking pan.
  2. Place all the ingredients except the chocolate chips in the blender and blend for two minutes until smooth.
  3. Pour into greased pan and top with chocolate chips.
  4. Bake for 25-30 minutes and let sit for at least 2 hours (or even better, overnight!) before cutting.
