Lemon Poppyseed No-Bake Bites

Discover a protein rich and tasty snack like these Lemon Poppyseed No-Bake Bites - perfect for mid-day slumps!
  • 6 ounces (1 package) Woodstock Organic Lemon Almonds
  • 1 cup rolled oats
  • ⅓ cup Stonyfield Double Cream Yogurt
  • 1 lemon, juiced
  • ⅓ cup real maple syrup
  • ½ cup coconut flour (or vanilla protein powder for added protein)
  • 1½ teaspoons poppyseeds
  1. In your food processor, grind the almonds into almost resembling almond flour.
  2. Add the rest of the ingredients except the poppyseed and pulse until combined and a dough forms.
  3. Sprinkle poppyseed in and pulse one more time.
  4. Remove from food processor into a bowl and using a small ice cream scoop, form into half balls or roll into small balls with your hands.
  5. Place in an airtight container and refrigerate for up to a week.
