Crunchy Detox Cabbage Slaw

This detox cabbage salad is just what we need after overindulging during the holidays.
Ingredients
for the slaw:
  • ½ head raw cabbage
  • 2 large carrots, peeled
  • 1 bulb fresh fennel
for the dressing:
  • ⅓ cup apple cider vinegar
  • ½ lemon, juiced
  • 3 tablespoons maple syrup
  • 2 tablespoons olive oil
  • 1 garlic clove, smashed and minced
  • 1 teaspoon cayenne pepper
  • 1 tablespoon kosher salt
Instructions
  1. Finely chop the cabbage, carrots, and fennel and place in a large bowl.
  2. Whisk together all the dressing ingredients and pour over slaw. Using hands, massage for 5-10 minutes and then refrigerate until ready to serve.
