Beef Lettuce Wraps

Beef Lettuce Wraps are a quick and flavorful lunch or dinner idea!
for the filling:
  • 1 pound ground beef
  • 1 tablespoon Simply Organic Adobo blend
  • 1 tablespoon Simply Organic cumin
  • 1 tablespoon Simply Organic smoked paprika
  • salt and pepper, to taste
for the tomato salsa:
  • 2 large roma tomatoes, chopped
  • ½ cup fresh cilantro, chopped
  • ¼ white onion, finely chopped
  • 2 tablespoons rice vinegar
  • salt and pepper, to taste
to assemble wraps:
  • ½ cup Stonyfield Double Cream Plain Yogurt
  • ½ cup shredded cheese
  • ½ head of iceberg lettuce, leaves separated
  1. Over high heat, sauce the beef with the spices and season with salt and pepper, cooking until brown and crispy.
  2. While the beef cooks, mix the salsa ingredients together and season. Set aside.
  3. To assemble wraps, place seasoned ground beef in lettuce cups and top with tomato salsa, cheese, and a drizzle of double cream yogurt (I like to place in plastic bag and pipe it out!).
