Italian Pine Nut Cookies

These simple yet elegant cookies are the perfect treat to serve after dinner with espresso, just like Italians would!
  • 1 stick unsalted butter, softened
  • ½ cup granulated sugar
  • ¼ cup ground pine nuts
  • 1 large egg
  • 1¼ cup all purpose flour
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • ¼ teaspoon ground cinnamon
  • ½ cup whole pine nuts
  1. Preheat ovn to 325F and line a baking sheet with parchment paper.
  2. In a large bowl with a spatula, cream the butter and sugar by hand. Incorporate the group pine nuts and egg, stirring until combined.
  3. Add all the rest of the ingredients except the whole pine nuts and form into a dough. Using plastic wrap, roll into a log an refrigerate for 2-4 hours.
  4. Slice log into ½ inch rounds and press whole pine nuts on top. Bake until lightly golden brown.
