Sausage Quinoa Chili

This hearty sausage quinoa chili comes together quickly, for a one pot meal that's perfect for those football Sundays!
  • 1 package of four artisan Kayem sausages, chopped
  • 2 large carrots, chopped
  • 4 stalks celery, chopped
  • 2 large onions, chopped
  • 28 ounces crushed tomatoes
  • 1, 15 ounce can black beans
  • 2 cups chicken stock
  • 1 tablespoon smoked paprika
  • 1 tablespoon salt, or more to taste
  • 2 cups cooked quinoa
  1. In a large stock pot, saute the chopped sausage for 5 minutes.
  2. Add the carrots, celery, and onions and cook until vegetables have soften.
  3. Add tomatoes, beans, chicken stock, and spices.
  4. Let simmer for 30 minutes and then add quinoa, stirring to combine.
  5. Serve immediately or freeze in portions for future meals.
