Chocolate Walnut Yogurt Muffins

These tender, chocolate and walnut packed muffins are a great source of fiber and perfect as a mid-day treat!
  • 1 cup all purpose flour
  • ½ cup whole wheat flour
  • 3 teaspoons baking powder
  • 2 tablespoons ground flax seed meal
  • 1 teaspoon salt
  • ¾ cup granulated sugar
  • 2 teaspoons vanilla extract
  • ¾ cup Stonyfield Greek Whole Milk Yogurt
  • 2 large eggs, whisked
  • ⅓ cup coconut oil, melted
  • 3 ounces Divine Milk Chocolate, chopped
  • ⅓ cup chopped walnuts
  1. Preheat oven to 350F and line a muffin tray with liners.
  2. Whisk together the flours, baking powder, flax seed meal, and salt in a large bowl.
  3. In a separate bowl, fold in the sugar, vanilla, yogurt, and eggs.
  4. Combine the wet and dry ingredients. Fold in the melted coconut oil and add in the chopped chocolate and walnuts.
  5. Scoop into muffin liners and bake for 20-35 minutes until golden brown.
