Beer Cheese Soup

This Beer Cheese soup is a classic recipe for the cooler months - creamy, luscious, and so delicious!
  • 2 tablespoons unsalted butter
  • 2 small yellow onions, finely diced
  • 4 stalks celery, finely chopped
  • 2 large carrots, peeled and finely chopped
  • 4 cups dark beer
  • 4 cups chicken or vegetable stock
  • 2 cups light cream
  • 3 tablespoons cornstarch
  • 16 oz. cheddar cheese, shredded
  1. In a medium-size pot, melt the butter over medium-high heat and sauté the onions, celery, and carrots for about 10 minutes. Add the beer and stock, simmering for another 20 minutes.
  2. In a separate large pot, simmer the cream and quickly whisk in the cornstarch. Add the shredded cheese and whisk until the cheese melts.
  3. Add the simmered beer/stock while whisking in the melted cheese mixture. Cook for another 10 minutes, and serve hot.
