Mexican-style Beef Stuffed Zucchini

Serves: 2-4 servings
  • 4 medium zucchini
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 1 small red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • ½ cup shredded cheese
  • salt and pepper to taste
  1. Preheat the oven to 350F. Grease a baking sheet with oil and set aside.
  2. Slice zucchini in half lengthwise and scoop out the insides.
  3. In a large saute pan, heat the olive oil over medium heat.
  4. Cook the onion, bell pepper, and garlic until soft and translucent.
  5. Add the ground beef and taco seasoning and cook through, about 15-20 minutes.
  6. In the meantime while the beef cooks, pre-bake the zucchini for 15 minutes. Place on baking tray, salt and pepper the insides and bake before filling.
  7. Once pre-baked, fill with ground beef mixture, top with cheese, and finish baking for another 15 minutes.
