Double Coconut Chocolate Cookies

Serves: 2 dozen
- ½ cup coconut oil, softened
- ½ cup dark brown sugar
- ¼ cup granualted sugar
- 1 large egg
- 1 tablespoon vanilla extract
- ¼ teaspoon almond extract
- 1¾ cup all purpose flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ½ cup chocolate chips
- ½ cup coconut, shredded
- 2 tablespoons whole milk
- Cream the coconut and sugars together.
- Add the egg and extracts.
- Incorporate all the dry ingredients until mixed but do not over mix.
- Fold in by hand the chocolate chips, coconut, and milk.
- Scoop onto greased cookie sheet in one tablespoon-sized balls.
- Bake for 12-15 minutes until golden brown.
