Massaged Raw Kale Salad with Seeds

Kale gets the special treatment of a balsamic and olive oil massage, then 4 kinds of healthy seeds are added for crunch, flavor, and health benefits! Great summer salad!
  • 1 bunch fresh kale
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon chia seeds
  • 2 tablespoons pumpkin seeds
  • 2 tablespoons flaxseeds
  • 1 tablespoon sunflower seeds
  1. Remove stems from kale. Stack the leaves, roll them up, and shred them (chiffonade style cut).
  2. Place in bowl and drizzle oil and vinegar. Using clean hands, massage kale for 3-5 minutes, to tenderize it.
  3. Sprinkle with all the seeds and enjoy chilled.
