Mango Coconut Smoothie Bowl

Have you ever had a mango smoothie bowl? For those mornings when you have a little more time to eat breakfast, smoothie bowls are my go to meal and this Mango Coconut Smoothie Bowl is a favorite for it’s tropical flavor and its nutrients!

The winter is a time for comfort foods and for me, a fresh, ripe sweet mango brings me back to simpler times. Growing up in the middle of the Caribbean Sea, with a mango tree in our backyard, our summers were quite literally drenched with the sticky sweet juice of mangoes. Because when you commit to eating mangoes on a hot summer day, my dad used to say you couldn’t just eat one. Mango eating gets messy when you’re eating them under the bright sun, seeking shade under the tree itself. When you eat mangoes in the Dominican Republic, you eat between 4-6 mangoes in a sitting, simple as that. You knew you’d have the fragrant mango juice run down your hands and arms, dripping from your elbows onto the grass, so the commitment had to be a few mangoes, every weekend.

Now a days, you can find chopped mangoes in perfectly pristine plastic containers and sure, they’re easy, but not as joyful. Thus whenever I get a chance to go back home to the island, mango-eating is always on my list. But reality sets and I remember I live in New England, where mangoes aren’t in my backyard, so I get what I can at the store when they are in season and imported. To recreate the happiness of eating mangoes with my Dad, I created this recipe for a Mango Coconut Smoothie Bowl that is filled with the sweet taste of mangoes, along with mango’s best friend: coconut!

These Mango Coconut Smoothie Bowls are extra special because they have one of my favorite products ever: the Coconut Cream Powder by Anima Mundi. It’s basically the most aromatic, most natural coconut that’s been dehydrated and turned into a delicate powder and is the perfect addition to all the things. Smoothies, coffee, cakes, cookies – you name it! Anima Mundi describes it as “a luxurious creamy powder loaded with healthy oils and fiber. The naturally occurring oils in coconut can nourish our gut, our skin, our brain, and beyond!” and dear goodness, I agree. The coconut cream powder makes this smoothie bowl is so perfect, and with the addition of a little ground ginger, it’s like I’m back home all over again.

I discovered the brand on Instagram and instantly connected to the founder, Adriana. She’s from Costa Rica and has spent her life working with herbs all over Central and South America. Not only that, but it’s just that her energy and vibe literally pulled me towards this brand. I barely know the woman and feel like I just have so much love for her and what she does! Start your mornings with this Mango Coconut Smoothie Bowl and feel how bright and light you'll be after the first bite!
Ingredients
  • 3-4 medium ripe mangoes
  • 3 tablespoons Anima Mundi Coconut Cream Powder
  • 1 teaspoon ground ginger
toppings:
  • ½ cup fresh blueberries
  • ½ cup coconut flakes
  • 1 cup granola
Instructions
  1. In a blender, add peeled and chopped mango with the coconut cream powder and ginger. Blend until a smooth puree and pour into two bowls.
  2. Top with a variety of toppings in the recipe or your own!
