In a small pan over high heat, whisk together 1 cup balsamic vinegar and 1/2 cup granulated sugar. Simmer until the sugar dissolves and the balsamic vinegar starts to reduce. Once it’s half gone, turn off and use as a glaze!

Tomato Basil Mozzarella Salad

- 3 cups fresh tomatoes chopped
- 2 cups mozzarella pearls or fresh mozzarella cubed
- ½ cup basil thinly sliced
- ¼ cup great olive oil
- 3 tablespoons balsamic glaze
- salt and pepper to taste
Instructions
- Toss all the ingredients together except for the balsamic glaze. Let marinate for 30 minutes and then drizzle balsamic glaze just before serving. Serve chilled or room temperature.
