It’s not that we get lazy during the summer, it’s actually the opposite. We just want to spend more time outside in the sun, soaking up that Vitamin D, than actually slaving away in a kitchen. That’s why easy and simple recipes like this Tomato Basil Mozzarella Salad have me loving summer more than usual.

Super simple because I can stop by my closest local farm and pick up every single ingredient I need for this recipe in under five minutes. An dif you’re like me, sometimes you don’t want to eat big heavy meals during the hot summer months and this salad really hits the spot: juicy tomatoes, creamy mozzarella, sweet balsamic glaze, and earthy olive oil – all excellent ingredients that when paired with herbs like the gorgeous basil, really shine.

If you don’t have balsamic glaze at home or can’t find it in your local stores, it’s pretty easy to make at home! In a small pan over high heat, whisk together 1 cup balsamic vinegar and 1/2 cup granulated sugar. Simmer until the sugar dissolves and the balsamic vinegar starts to reduce. Once it’s half gone, turn off and use as a glaze!

Ingredients

  • 3 cups fresh tomatoes chopped
  • 2 cups mozzarella pearls or fresh mozzarella cubed
  • ½ cup basil thinly sliced
  • ¼ cup great olive oil
  • 3 tablespoons balsamic glaze
  • salt and pepper to taste

Instructions

  • Toss all the ingredients together except for the balsamic glaze. Let marinate for 30 minutes and then drizzle balsamic glaze just before serving. Serve chilled or room temperature.
