Pomegranate Blueberry Cocktail

 Cheers – you’ve made it halfway through the week! Celebrate with a Pomegranate Blueberry Cocktail; it’s fruity, slightly sweet, and just the right amount of booze to help you relax. 

This Pomegranate Blueberry Cocktail is the perfect after-work drink! Easy to make with just three ingredients!

Mind you, I’m a total lightweight. I’ll have two drinks and you’ve got to carry me home, so I try to stick to the one drink policy. It works for me when I’m out and about, but when I’m home I definitely allow myself a couple more. My bed is mere frets away from my drinking self, so all is safe. Safe, you ask? Well, I’m definitely not a rowdy drunk. I’m not a fighting drunk either. I’m the type of drunk that will cry at the sight of a beautiful burger, a delicious drink, or if someone says I love beautiful that night (totally happened this summer!) So to avoid those public tears, drinks are drunk at home and that’s that.

This Pomegranate Blueberry Cocktail is the perfect after-work drink! Easy to make with just three ingredients!

Now that we’ve gotten that out of the way, let me introduce you to Solbeso, the first ever spirit distilled from fresh cacao fruit. It’s the first of its category, and a new category hasn’t been added for about 200 years (the last addition was when bourbon came along to grace our glasses). Until now, when the cacao fruit has a place to shine in all its glory.

My connection to Solbeso goes deeper than the fact that I think it tastes great – part of the cacao fruit used to make Solbeso is harvested in the Dominican Republic, my home island. After the cacao is harvested and the nibs are removed, the pulp is then dumped into rivers and waterways, causing massive water pollution due to the pulps low ph. The Dominican Republic actually spends money to treat the fruit with microbes before repatriating it into the environment – so Solbeso is the solution to getting that pup out of the water and into distilleries and fermentation tanks.

Basically, “one man’s trash is another man’s treasure” has never been truer. Wondering what Solbeso tastes like? Well, it doesn’t taste like chocolate, if that’s what you’re thinking. It carries these soft citrus notes (found in chocolate too!) as well as some floral and tropical fruit notes. Perfect when paired with sweet berries like in this cocktail. Pomegranate Blueberry Cocktail

Stir this drink up in less than a minute and you've got the perfect way to relax after a long day at work.
Ingredients
  • 4 ounces Pomegranate Blueberry Juice, chilled
  • 2 ounces Solbeso, chilled
  • 1 tablespoon frozen blueberries
Instructions
  1. Pour all the ingredients into a rocks glass and stir together. The frozen berries will keep your cocktail chilled for longer and won't water down the flavor.
