They are light, fluffy, sweet, and nutty – the perfect treat for weekends or weekdays when you just need a treat during the middle of the day. I’ve lately become addicted to waffles – they are super easy to make in the blender and freeze gorgeously – you can always just throw them in the oven or microwave when you’re on the run.
Packed with crushed hazelnuts and sweetened shredded coconut – these are my new best friends for breakfast!
Hazelnut & Coconut Whole Wheat Waffles

Ingredients
- 3 tablespoons dark brown sugar
- 2 large eggs
- 1 ½ cups hazelnut milk
- ¼ cup unsalted butter melted
- ½ tablespoon vanilla extract
- 1 teaspoon almond extract
- 2 cups whole wheat flour
- 1 teaspoon salt
- 3 teaspoons baking powder
- ½ cup shredded sweetened coconut
- ¼ cup chopped hazelnuts
- hazelnut chocolate spread to serve
Instructions
- Place the sugar, eggs, hazelnut milk, melted butter, and extracts in the blend. Mix for 5-10 seconds.
- Add the dry ingredients (flour, salt, baking powder) and mix until incorporated. You may need to scrape the sides with a spatula mid-way.
- Pour mixed batter into a large bowl and fold in the coconut and chopped hazelnuts.
- Cook per your waffle iron's instructions and serve warm, drizzled with hazelnut chocolate spread
