They are light, fluffy, sweet, and nutty – the perfect treat for weekends or weekdays when you just need a treat during the middle of the day. I’ve lately become addicted to waffles – they are super easy to make in the blender and freeze gorgeously – you can always just throw them in the oven or microwave when you’re on the run.

Packed with crushed hazelnuts and sweetened shredded coconut – these are my new best friends for breakfast!

Hazelnut & Coconut Whole Wheat Waffles

Hazelnut Coconut Whole Wheat Waffles 1

Ingredients

  • 3 tablespoons dark brown sugar
  • 2 large eggs
  • 1 ½ cups hazelnut milk
  • ¼ cup unsalted butter melted
  • ½ tablespoon vanilla extract
  • 1 teaspoon almond extract
  • 2 cups whole wheat flour
  • 1 teaspoon salt
  • 3 teaspoons baking powder
  • ½ cup shredded sweetened coconut
  • ¼ cup chopped hazelnuts
  • hazelnut chocolate spread to serve

Instructions

  • Place the sugar, eggs, hazelnut milk, melted butter, and extracts in the blend. Mix for 5-10 seconds.
  • Add the dry ingredients (flour, salt, baking powder) and mix until incorporated. You may need to scrape the sides with a spatula mid-way.
  • Pour mixed batter into a large bowl and fold in the coconut and chopped hazelnuts.
  • Cook per your waffle iron's instructions and serve warm, drizzled with hazelnut chocolate spread
