This summer, my husband and I worked over 14 hours a day, six days a week at the restaurant. Meals like this Falafel with Babaganoush saved the day when we only had quick one hour breaks between shifts!
Convenience products, ones that are healthy and have whole ingredients, are a staple in our fridge and freezer. When we received samples of Veggie Patch products, quick meal ideas popped into my head. Sandwiches, salads, and snacks, oh my! The first thing I wanted to pair with this Veggie Patch Classic Falafel was babaganoush, a classic dish originally from Egypt but recognized all over the Mediterreanean. Made with a base of grilled, charred, or roasted eggplant it is then blended with garlic, spices, and herbs to make a rich and luscious spread.
The falafel is made with chickpeas, with 6 grams of protein per serving, GMO-free, vegan, and so delicious! The spices are the perfect amount, the falafel cook up moist and just right (whether you bake them in the oven until crisp or microwave them for a quick, protein filled snack).
Served up inside a pita with a slathering of this babaganoush recipe, fresh shredded lettuce, and a side of hummus, this is the perfect lunch or late night dinner. Babaganoush

- 1 large eggplant
- ½ cup chopped parsley
- 2 garlic cloves minced
- 1 lemon juiced
- 2 tablespoons tahini
- 1 teaspoon cumin
- 1 teaspoon cayenne
- 1 teaspoon paprika
- salt and pepper to taste
Instructions
- Preheat both your grill and oven to 350F.
- Grill the eggplant until the skin is charred, and then roast in the oven for 20 minutes with salt and pepper.
- Once eggplant is cooked through, remove skin and place in food processor with all of the ingredients. Blend until smooth and serve with falafel, on pita chips, or as a dip for raw vegetables.
