Our restaurant’s garden has an abundance of fresh kale and kale isn’t even on our current menu! So what does a girl do? She eats a kale salad every day of the week, especially this Massaged Raw Kale Salad with Seeds! 

This delicious kale salad starts with kale getting a balsamic vinegar and olive oil massage. Then chia, pumpkin, sunflower, and flax seeds are tossed in for crunch, flavor, and health benefits!

The last day of August does not have to mean the end of summer. Actually, it’s definitely NOT the end of summer! We still have a couple of weeks left of warm summer days, even though the nights have once again become a bit too chilly. Enjoy these summer days by serving up big, fresh salads that are hearty and at the same time, healthy.

This Raw Kale & Seed Salad gets the special treatment by being massaged for a couple of minutes (make sure your hands are clean!) with both olive oil and balsamic vinegar. What a lucky salad, I’d say! Topped with a variety of seeds , it’s a powerhouse of a salad. Don’t have a specific seed? Substitute of whatever you have in your pantry!

Massaged Raw Kale Salad with Seeds

Kale gets the special treatment of a balsamic and olive oil massage, then 4 kinds of healthy seeds are added for crunch, flavor, and health benefits! Great summer salad!

Massaged Raw Kale Salad with Seeds

Ingredients

  • 1 bunch fresh kale
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon chia seeds
  • 2 tablespoons pumpkin seeds
  • 2 tablespoons flaxseeds
  • 1 tablespoon sunflower seeds

Instructions

  • Remove stems from kale. Stack the leaves, roll them up, and shred them (chiffonade style cut).
  • Place in bowl and drizzle oil and vinegar. Using clean hands, massage kale for 3-5 minutes, to tenderize it.
  • Sprinkle with all the seeds and enjoy chilled.
