Can you believe summer is almost over? This season has flown by – specially for us working tirelessly at the restaurant. Once the fall and winter season hit, we crave for these summer days. But once we actually have to survive them, we start craving the chillier weather in August. We’re exhausted, but happy. We’re so grateful we get to live on this gorgeous island, but can’t wait to travel all over the US this fall/winter with my husband!

And then this Chilled Cucumber Peach Soup comes in – it’s so easy to make, incredibly refreshing, and makes me just happy! The flavors are amazing: fresh sweet peaches, crisp cucumbers from the garden, and a good squeeze of lime make this a great recipe.

Even better, this chilled soup is made with Stonyfield’s Organic Whole Milk Yogurt! The yogurt adds an awesomely silky texture to this chilled soup, plus the flavor improves greatly! The yogurt brings in some tanginess of course, making this a delicious first dinner course. Finish it with some great olive oil and garnish the soup with finely diced cucumbers and a sliver of fresh peach, for the ultimate presentation.

Chilled Cucumber Peach Soup

This end of summer chilled soup is the perfect way to start any meal, plus the peaches and cucumbers are extremely refreshing.

Ingredients

  • 4 cucumbers peeled and deseeded
  • 2 medium peaches with the pit removed
  • ½ cup whole milk Stonyfield yogurt
  • 1 large lime juiced and zested

Instructions

  • In your food processor, blend all the ingredients together until smooth.
  • Serve chilled.
