This Balsamic Caprese Chicken recipe has become my go to dinner for the past three weeks, making an appearance twice, even three times a week! It’s packed with flavor and super simple to make, plus its the perfect recipe to use your surplus of garden tomatoes and fresh basil!
Summer nights aren’t only about grilling – sometimes you just want a quick and delicious dinner to get on the table with minimal effort that still tastes fantastic. That way you can get on to more important things like catching up on your favorite TV shows, playing board games on the deck, or even just going to bed extra early to get some shut-eye.
That’s where this Balsamic Caprese Chicken dinner recipe comes in. It’s a simple recipe but it’s main ingredients are what make it tasty: sweet grape tomatoes, creamy mozzarella cheese, fragrant basil from your garden, and tangy balsamic glaze.
While the pasta cooks, the chicken absorbs all the flavors of the tomatoes and the cheese slowly melts, perfecting a great dinner! Tear some fresh basil and your dinner is ready in under 30 minutes. Serve alongside a big salad of fresh greens and you’ve got the perfect summer dinner!
Balsamic Caprese Chicken
Ingredients
- 2 tablespoons olive oil
- 4 skinless chicken breasts
- salt and pepper to taste
- 1 pint grape tomatoes sliced in half
- 1 clove garlic minced
- 8 ounces mozzarella cheese
- 1 handful fresh basil
- 4 tablespoons balsamic glaze
- 1 pound cooked pasta
Instructions
- Preheat oven to 450F or broil.
- Heat a saute pan with olive oil.
- Season the chicken breasts with salt and pepper, and cook on both sides. Once halfway cooked, add the grape tomatoes and garlic.
- Top with mozzarella slices and place in oven for 5 minutes, until tomatoes soften and mozzarella gets golden brown.
- Serve with fresh basil and a drizzle of balsamic glaze over hot pasta.

You can buy it at your local store but you can easily make it by reducing balsamic vinegar on the stovetop over medium heat!
